Reiko Kanazawa, Markus Shimizu

mimi is a fermentation lab and store in Berlin-Wedding where miso, soy sauce, mirin and other selected fermentation products, mainly based on koji, a Japanese fungus, are produced.
mimi was founded in 2017 by Markus Shimizu who also teaches the various aspects of fermentation in workshops. His partner Reiko Kanazawa organizes events combining food and art.
